Silo is Britain's first zero waste restaurant. Here the food is local and sustainable, fixtures and fittings are up-cycled, everything is composted, and bills are emailed rather than printed.

Conceived with the desire to produce creative, innovative dishes while demonstrating respect for the environment and community, most produce is either grown on site, or in co-operation with local growers. Heading up the kitchen is Douglas McMaster, the 27-year-old former BBC Young Chef of the Year. McMaster spent time at St John's and Noma, and while sustainability is king at Silo, anyone from vegans to enthusiastic carnivores will be catered to. The Guardian's Marina O'Loughlin has stated that looking to Silo, "we're looking at the future."

Enjoy a delicious three-course tasting menu, choosing either 'Herbivore' or 'Omnivore' offerings. The two menus comprise of meat and fish for Omnivorous diners and plant and diary for the Herbivorous diners. Guests, though, are welcome to mix and match courses from either menu to create a tasting menu comprising of both vegetarian and meat dishes, ensuring all eating habits are catered for: vegan, vegetarian, pescetarian and carnivores.

    Helpful, friendly staff. Fabulous food and atmosphere. We had a wonderful time.

    Hidden Gem in Brighton

    It was delicious, beyond all expectation. Interior is simple but food outstanding and service super friendly.

  • Amazing food, disappointing experience.

    The restaurant was easy to find, and our reservation clearly noted on their list. I was a little disappointed that despite requesting to be sat away from the entrance (to avoid any drafts), we were sat at a table nearest to the entrance, and it was a little too cold for comfort (we had to wear our coats during the meal).
    The first waitress seemed somewhat cold in personality; this was made up by the second waitress who offered to explain the menu. I was expecting a tasting course to be a series of plates that are carefully chosen for us, only to find that we were essentially choosing from a set menu.
    Despite these incidences, the food was delicious. Especially the mushroom starter and the chicken main. Not 100% sure I enjoyed the rhubarb dessert.
    Finally, I was hoping a little something extra would be provided to celebrate Karl's birthday (as noted on the correspondence) but nothing really presented, not even in the dessert.
    But the wine pairing we added to the dinner was very enjoyable.

    Great food, skilled chefs

    The food was amazing, and meticulously put together. The seasoning of the food was spot on and the portions were a very good size, considering that we had four courses. When we first arrived, we weren't shown to our seats, and told we were sitting at the bar, which was a little strange, and make us feel a little uncertain. The food however, and the ability to discuss the food with the chef's and watch them work, made up for this.

  • A truly outstanding experience

    Me and my partner had the most amazing experience at silo. The food was nothing like we've ever tasted before, truly incredible. The service was outstanding and the chefs were extremely professional overall making it one of the best date nights we've ever had!

  • A special evening all around

    The food was incredible and the service was very friendly and personal. Instead of waiters bringing food, the chef's come to the table and talk passionately about their own dishes. At the end of the meal one chef brought over a freshly baked loaf of his sourdough bread for us to take home 'so it didn't go to waste'. A special evening all around.
