Alex Dilling, a London-born chef, started his culinary journey with a deep admiration for European cuisine, developed through his travels and diverse experiences. His professional path began under the mentorship of renowned chefs at Alain Ducasse's Adour in New York, where his team earned two Michelin stars in early 2012. Alex's passion for caviar, one of his signature ingredients, was fostered at Caviar Russe. Returning to the UK, he led operations at Helene Darroze's establishments and later at The Greenhouse in London, continuing to draw an international clientele. In September 2022, he opened his first standalone restaurant at Hotel Café Royal, which focuses on French-inspired dishes crafted with the finest ingredients.
