Cannon & Cannon has been at the forefront of British charcuterie since 2010. Brothers Sean and Joe Cannon collaborate with a growing number of artisan food producers. Their new venture, Meat School, launched in 2015 and promotes the British cured meat industry. It serves as an educational hub in London for butchery, curing, and the making of charcuterie.
Get an education at Meat School, and learn the foundations for home curing. The best cured meat begins with high welfare reared, rare breed animals. You will receive an introduction on rare breed pork, and interactive instruction on boning and skinning the animal. Learn how to break down a pig into cuts for curing, key knife and string skills, and how to create curing mixes.
During a break in your private group masterclass, enjoy a lunch of British cured meats paired with wine and beer, and discover the secrets to matching beverages with various charcuterie. When the class is through, you will take home a pork jowl or belly to turn into guanciale or pancetta, using your newly sharpened skills!
