Exclusive to TRULY

  • This experience is unique to TRULY guests; designed by former Director of Research & Development at L'Enclume

Description

Arriving in the Lake District, explore Lake Windermere before dining at Lake Road Kitchen in Ambleside on your first evening. Owned by Head Chef James Cross, the restaurant's ethos is to only use produce from Northern European climes, focusing largely on locally sourced, sustainable produce and personally foraging the beaches and forests of the Lake District. Chef Cross has adopted his foraging philosophy from multi-Michelin-starred super chef Rene Redzepi, with whom he previously worked at world-beating Noma, and his innovative menu places heavy emphasis on pickling and preserving, fermentation and super-fresh produce.

Unpretentious and fun, Lake Road Kitchen’s eight-course tasting menu is a celebration of nature which shows in Cross’ bold and creative dishes, such as Grilled Cornish octopus tentacle, LRK cultured Skyr, wild herbs, fermented ramson purée. Explore why The Guardian's Marina O'Loughlin described it as "a meal without a single missed beat" and awarded it a 10/10 for food.

The following day, make your way to the northern edge of the Lake District. Cumbria has a long heritage of spirit distilling, particularly whisky. Having once been a part of Scotland, the Lake District is England’s slice of the Highlands: remote, wet and beautiful. In short, it is ideal for whisky production.

At a renovated 1850’s Victorian farm, witness the production of world-class spirits on a professionally guided tour at Lakes Distillery; certified eco-friendly, a ‘Green Distillery'. Learn about the artisanal distilling techniques and finish with a tasting session of three signature spirits: The ONE whisky, The Lakes Gin, and The Lakes Vodka.

Returning to Windermere, prepare for a showcase evening meal a short drive away in the development kitchen of two-Michelin-starred L'Enclume. French for 'the anvil', referring to the 13th century building's past as a blacksmith, L’Enclume’s idyllic riverside location in the village of Cartmel provides a stunning setting for highly imaginative dishes on a completely experimental tasting menu. In 2016, L'Enclume not only made to top sport for the fourth year in a row in the Good Food Guide 2016, but also secured a fifth consecutive year with a score of 10/10.

Simon Rogan, who trained under Marco Pierre White, presents a spontaneous and harmonious menu created from the very best of the Cartmel countryside. Vegetables, herbs, fruits and edible flowers come straight from Rogan’s 12-acre organic farm.

To round-off a spectacular culinary weekend, enjoy a more traditional side of fine dining at The Samling Hotel's restaurant. Built in 1780, The Samling sits on over 66 acres of picturesque grounds that flow down onto Lake Windermere. The hotel was voted ‘Best Dining Hotel in the World’ at the Boutique Hotel Awards, and Head Chef Nick Edgar was previously head chef at Raymond Blanc's two-Michelin-starred Le Manoir au Quat' Saison until 2015. The dining room is intimate, and the service slick, ensuring your every need will be catered to. Each dish in the signature 5-course lunch has a classic base, while still making the most of foraged produce, in keeping with the New Nordic style that’s become synonymous with fine dining in the region.
