Quilon holds a Michelin star for cooking from India's south-west coast, and this is its seafood menu: six courses at 41 Buckingham Gate, spiced with restraint rather than heat.
You work through a coriander-infused seafood broth and subtly spiced baked cod, among other dishes built around what the coast gives rather than around heat. Tea and coffee follow.
