Ryan 'Mr Lyan' Chetiyawardana's journey behind the bar began at Edinburgh University. Calling on his studies in Biology, Philosophy and the Fine Arts, Mr. Lyan developed an acute palate by experimenting with ingredients. He has worked with biologists, physicists and even medics to produce optimal quality cocktails.

A London cocktail legend, Mr. Lyan’s achievements reflect the capital's current cocktail culture. Over the years he’s won ‘UK Bartender of the Year’ at Diageo World Class in 2009, was named ‘Innovator of the Year 2014’ by Imbibe and reigned supreme as the ‘Best Bartender in the World 2015’ at the Spirited Awards. Ryan's bars, White Lyan and Dandelyan, have won ‘Best New International Cocktail Bar 2014 and 2015’ respectively, with Dandelyan also voted 'Best Place to Drink 2015' by Observer Food Monthly's discerning critics.

Mr. Lyan insists on using no perishables, fresh fruits or ice in his cocktails. His inventive concoctions use pre-mixtures, taking inspiration from the botanicals of the British countryside, and around the world. As Ryan says “the importance should never be on the bartender, the focus should be on the whole experience, on the space, on the drinks.”

Mr. Lyan’s ‘Evil Manhattan’ is a classic example of his work. A contemporary twist on an old favourite, Ryan uses a homemade Vermouth created by ‘nuking’ a selection of aromatic English botanicals, resulting in a much richer flavour and denser herbal aroma in comparison to an original Manhattan.

Dandelyan boasts a prime location at the glamourous Mondrian London Hotel in the historic 1970s Sea Containers House. You will have stunning views of St Paul’s, and the banks of the Thames. Late 70’s rock, blues and funk play over a backdrop of mirrored tables, vintage velvets and plush purples. Dandelyan's style combines American flair and British sensibility, with a dash of Mr. Lyan charm.
