Bordered by woodland, with a river running through the grounds, this Spanish countryside escape is famed for its attention to detail. Originally an 18th century paper factory, this ivy-clad building has had many lives, including that of a textile production warehouse, before going on manufacture beer and ice. Abandoned in the 60s, it was then taken over by architect-owner María Luisa, who carefully restored it to its country-glam appearance of today. But, not without maintaining the historical essence of the building. Traces of the hotel’s former self are everywhere, including the mill’s still-standing canals. The family run hotel prides itself on personal service. The rooms are each individually styled, ranging in colour, some with open-stone walls, others with sloping wood-beamed ceilings. Welcoming you to your room, there will be a bottle of Möet & Chandon Champagne for you to sip on as you unpack. You’ll also be invited to dine in the restaurant, where you can expect to taste Galician treasures such as the traditional grilled octopus, steamed hake or locally sourced beef sirloin, as well as light bites such as the goat’s cheese salad with mushroom ‘honey’. One evening will give you the opportunity to sample the Tasting Menu alongside the Sommelier’s Wine Pairing.To ensure ultimate relaxation, you’ll spend time at the hotel’s unique spa with a de-stressing massage each. You’ll also be able to use all the spa’s facilities including a sauna, Turkish bath, contrast showers, an ice room and two pools – one for swimming and the other with pressure jets and a counter-current stream. At the end of each day, retreat to your chic Deluxe Room, for a peaceful rest in a woodland paradise.
