Having been in love with the wild world since childhood, James Wood, a professional forager, spent many years developing his skills and knowledge of all things ‘wild’ - from mushroom paper to elderberry salt. As the owner and creator of Totally Wild UK, Wood is now seen as one of the UK’s top foraging and wild food experts.He and his team of qualified experts have led expeditions around the UK, where participants can learn where to find delicacies and note poisonous species to avoid. The team also forage for ingredients which are sold wholesale to Michelin-starred kitchens including The Ritz in the capital and Heston Blumenthal’s Fat Duck, in Bray, Berkshire. During a foraging course, you'll be exposed to the outdoors like never before, realising that wild food is everywhere. You’ll have the opportunity to taste infusions made from pre-foraged ingredients such as jams, chutneys, pickles and syrups. You’ll then take on a day’s adventure into the wild, productively foraging edible ingredients as a group, before putting them together to cook up a feast for your lunch.
