The fish used is always seasonal, line-caught and local. In addition to learning to cook beautiful fish, the expert chefs will teach you how to judge freshness, and spot the differences between farmed and wild fish.

During your three-hour class, you’ll learn the relevant knife skills to help you to correctly fillet and gut a fresh fish, ready for cooking. You’ll then discover a variety of cooking techniques, such as grilling, steaming, poaching, baking and sautéing.

Once you’ve prepared your fish dishes, you’ll be able to sample the fruits of your labour with a fish feast, complemented by paired wines. You can expect to try dishes such as grilled mackerel cakes with chilli relish, catch of the day en papillote with hollandaise, catch of the day fillets baked whole in Chinese style or cullen skink (smoked haddock chowder).

On completion of your day, you’ll receive an email with a comprehensive description of each technique used, as well as the recipes of your fish feast.
