“The class was full of humour and delivered in an easy manner - I can't wait to cook a fish feast for my family!” Delicious Magazine

Why we love it

The idea of preparing a whole fish for a meal can be rather intimidating. In this cooking class, the myth is debunked as you are shown how to fillet, grill, poach, steam, bake and sauté the freshest of sustainable fish, before tucking in to the catch of the day. Meat-free Mondays are about to become the real deal!

What's Included?

  • Experience a three-hour Fantastic Fish cooking class for one at Cookery School at Little Portland Street
  • Learn how to source fish responsibly before preparing them like an expert with hands-on demonstrations
  • Taste what you have prepared by making a fish feast, complete with salad and vegetables
  • Pair your meal with carefully selected wines
  • Receive an emailed pack of the recipes you made during the class

Description

Cookery School prides itself on sustainable learning. While they appreciate that fish, meat and poultry are a part of the dinner table for most households, they always ensure that responsible sourcing is first and foremost. The fish used is always seasonal, line-caught and local. In addition to learning to cook beautiful fish, the expert chefs will teach you how to judge freshness, and spot the differences between farmed and wild fish.

During your three-hour class, you’ll learn the relevant knife skills to help you to correctly fillet and gut a fresh fish, ready for cooking. You’ll then discover a variety of cooking techniques, such as grilling, steaming, poaching, baking and sautéing.

Once you’ve prepared your fish dishes, you’ll be able to sample the fruits of your labour with a fish feast, complemented by paired wines. You can expect to try dishes such as grilled mackerel cakes with chilli relish, catch of the day en papillote with hollandaise, catch of the day fillets baked whole in Chinese style or cullen skink (smoked haddock chowder).

On completion of your day, you’ll receive an email with a comprehensive description of each technique used, as well as the recipes of your fish feast.
