Orkney-born Shirley and Derek Mowat left the northerly archipelago for London in 1988 but screeched to a halt in the Scottish capital, opening their first guesthouse in Edinburgh’s Trinity neighbourhood. Recently, their latest venture has just opened in the same city, The Dunstane Houses. The venue is home to Ba’ Bar, a homage to the couple’s hometown. The ba' is a handmade, cork-filled, leather ball used during The Kirkwall Ba', a 700-year old tradition of street football played twice a year on Christmas day and Hogmanay, inviting up to 100 men per team and with, well, no rules!The Ba’ Bar has one of the widest selections of premium craft spirits in Edinburgh. The vintage whisky cabinet is a connoisseur’s treasure trove of rare and vintage single malts and blends; while the selection of artisan gins means you could stay for a week and never have the same G&T twice. This gin and tonic experience will take you on a journey of Scottish gin – from the elegantly spiced, to the interestingly dry, contrasted with the exotically herbal. Creating the perfect G&T takes quality gin, the right tonic and a dab hand at pairing, which is all part of this educating experience.
