Patisserie requires a mastery of technique combined with imagination and requires a different skill set from working as chef de cuisine. Learn the fundaments with a six month hands-on intensive course with the Chef Academy London.
The practical training programme provides students with all the tools, skills and knowledge to feel confident in the kitchen and focuses on all aspects of pastry, baking and confectionery art. The programme takes place in the state-of-the-art laboratory kitchen led by a highly acclaimed pastry chef.
Students will also have the opportunity to work in a live professional kitchen with one of the Academy’s partner restaurants and learn every aspect of a chef’s routine, from the choice of produce to the balancing of costs. The course is broken into 5 modules, including Basic Mise en Place; Doughs and Breakfast Pastries; Tarts and Petits Gateaux; Production, Cakes, Mouses and Bavarois; and Chocolate, Sugar, Decoration and Celebration Cakes.
On successful completion of the course you will be HACCP certified and have an internationally recognised diploma from Chef Academy London. This course is aimed at career changers, professionals and beginners, who are focused and motivated to succeed in the industry. Get the best grounding to excel as a pastry chef.
