Melange Chocolate arises from its humble beginnings in 2008 when artisan chocolatier Isabelle Alaya founded her Chocolate Shop and Café in the cosmopolitan area of Bellenden Road, Peckham. Since then, Isabelle has built upon her business, establishing a reputation making speciality chocolate bars and truffles characterised by an eclectic combination of spices, herbs and fruits.

From her desire to teach about quality chocolate and its history, she founded The Chocolate Museum in 2013. The museum is located in a historic conservation area of Brixton, and aims to represent UK industry whilst also providing information and quality products. Housing Alaya’s growing collection of chocolate-related artefacts, the museum functions as a venue where her passion and interest in cocoa, chocolate history and British chocolate makers can be shared and passed on.

During your two-and-a-half-hour truffle masterclass, you will learn about the intricacies of the chocolate process, including where the chocolate comes from and how to prepare and flavour it accordingly. You’ll also try out a number of professional techniques such as tempering, enrobing, shaping the fillings and decorating the chocolates with colourful ingredients.

Sampling four different tasters, you’ll then have the opportunity to choose your favourites and start creating your own batch of truffles. You’ll make a minimum of 20 chocolate truffles or chocolate lollies each.

You’re bound to be in a whole load of truffle after this one!
