Kumud Gandhi built her reputation by catering for the rich and famous, including clients such as The Prince of Wales, Nelson Mandela, Madonna, The Royal Academy and Fashion TV. Her status as ‘The Spice Queen’ (a nickname coined by Nick Coffer at the BBC) and the piqued interest in copying her cooking style les to the creation of The Cooking Academy.
The school was founded in 2010, inspired by her family roots. Her mother’s family are chemists in India, and her father’s are spice merchants. This blend of science and an appreciation of spices stimulated her unique approach to food, inspiring her to cook with herbs and spices for nutritional and medicinal benefit.
Now Kumud’s expertise is not only shared with class attendees and radio listeners, her food and teachings can be found in her cookbook, A Cupboard Full of Spices. This book is designed to help you get to grips with spices, their characteristics, health benefits and their practical uses in cooking. It is a compendium of spices, used to create authentic Indian recipes that have been passed down through many generations.
During your Full-Day Cookery Course, you’ll have the opportunity of cooking some of Ghandi’s famed recipes by selecting your favourite cuisine to cook, including Middle Eastern, Vietnamese, Vegetarian, Vegan and Italian (to name a few). You’ll learn how to prepare ingredients and create a selection of plates under the theme of your choice. You’ll receive a starter pack, including all spices and recipes used throughout your course, as well as an exclusive gift of silver measuring spoons to take home and use in your kitchen.
