Master the essential skills to make, roll and fold a rough puff dough. Loved by Michel Roux Jr for its versatility, rough puff is the ideal base for a myriad of savoury and sweet creations. Learn how to mix, roll and fold the pastry dough. Make an almond frangipane filling, and prepare and cook fruit for Tarte au Fine. Create individual baked fruit tarts and an onion-topped Pissaladiere. Finally, at the end of the four hour cooking class your tutor will demonstrate ways to use up leftover dough.
