In 1988 hotelier Peter Chittick and his wife fell in love with a large country home in the Provencal hamlet of Crillon le Brave. Now, Hotel Crillon le Brave is a relaxing oasis, where guests can enjoy all of the simple pleasures of Provence. Located 25 miles northeast of Avignon, it is perched on a hill, surrounded by vineyards and olive groves.

Crillon le Brave is the perfect base from which to explore the surrounding scenery and sample regional culinary delicacies. Guests can look forward to a bottle of Billecart-Salmon champagne on arrival, and a sampling of delectable local, artisanal foods. The gastronomic highlight will be a seven-course tasting menu from Restaurant Jérôme Blanchet, with matching wine flight chosen by sommelier Benoit Liebus.

Chef Blanchet has been named one of the most talented young French chefs of his generation, with extensive culinary training at a variety of Michelin starred restaurants. He now runs the entire restaurant operation, supported by a young kitchen brigade of many talents. Precisely executed, the key to Jérôme’s cuisine is the subtle balance of southern flavours, suitable for an evening on the terrace, overlooking the vineyards and olive groves.

Guests will savour the ‘Menu du Chef’: the seven-course chef-selected menu, which changes nightly. The menu is dedicated to quality produce and seasonality, with France Today noting, "it's the assiduously local sourcing that makes the cooking so good." Homage is paid to local farmers, artisans and winemakers who deliver some of the world’s best produce to the kitchen's front door. Expect delicacies such as foie gras with strawberries and poached rhubarb, marinated sea bass with crispy snails and caviar, and limoncello soufflé served with verbena sorbet.

The tasting menu is paired with a matching wine flight by sommelier Benoit Liebus. The wine list focuses on wines from the Rhône Valley and Provence. It boasts excellent local Ventoux vintages, as well as some of the finest old bottles of Châteauneuf-du-Pape, Côte Rôtie and other jewels from the northern Rhône.
