Pierre Marcolini is a true artisan of chocolate. Born in 1964 in Charleroi, Belgium, Pierre Marcolini knew he wanted to be a chocolatier by the age of 14. Upon finishing his studies, he became a pastry chef and worked alongside many of the top professionals in Belgium, and was even crowned “World Pastry Champion” early on in his career.
Marcolini draws inspiration from everyday life when designing his innovative chocolate creations; inspiration could come from a modern art exhibition, a conversation with friends, or discovering a new flavour at a restaurant.
Most of all, travelling the world allows Marcolini to find new talent and experiment with the unexpected flavours of other cultures. Maison Pierre Marcolini now operates thirty stores, located in Belgium, Paris, London and Japan.
At the start of the 21st century, the chocolatier made the decision to begin creating his chocolates according to the bean-to-bar philosophy. He is involved in perfecting every step of the chocolate-making process, from planting seeds, to selecting the beans himself. Marcolini has nurtured special relationships with his producers located all over the world. His aim is to obtain the purest chocolate with the most authentic flavour, without the need for modern techniques such as GM or hybridisation.
This private after-hours experience will immerse you into the world of chocolate. You’ll learn the secrets to making great chocolate; the bean-to-bar philosophy, the importance of origin, the soil and roasting techniques, and how the creativity and pastry education of the chocolatier is reflected in refined and delicious creations.
You will taste seven different chocolates, in four forms each, from Grand Cru chocolates to delicately infused ganaches, exotic and flavoursome macaroons, and light, balanced pastry. The chocolates will be paired with beverages such as coffee, champagne and Marcolini’s impressive cocoa infusion; a drink that takes the best cocoa and combines it with tea-like infusions to create a powerfully aromatic brew.
At the end of your journey, take home a complimentary coffret. The box will include a selection of some of the best Grand Cru chocolates produced by Pierre Marcolini.
