The Quality Chop House was established in 1869 as a “progressive working class caterer”. Complete with original pew-style booths and galleon windows, the newly renovated restaurant boasts a wine bar, neighbouring deli shop, and on-site butchers.

Take this unique opportunity and learn whole carcass butchery with The Quality Chop House's Head Butcher. In a private masterclass for up to six guests, you’ll break down an either an entire lamb or pig - ribs, saddle, legs, pluck - or a side of beef, learning the art of butchery to create cuts of meat you can enjoy at home.

Sourcing meat for the butchery class follows the same process for sourcing what is served in the restaurant; it comes from one of the five farms The Quality Chop House works directly with. These small-scale producers are from Yorkshire, Galloway, Suffolk, Hereford and Leicestershire.

Classes start with a brief talk about the carcass: what species you are working with, the diverse methods of rearing, how this influences the character and flavour of the meat, and learning how to assess quality when buying.

The Head Butcher will then show you how to break the carcass into the main primal cuts - shoulders, legs, saddles, ribs and bellies – and show you the different characteristics. This private class offers you the chance to work together and individually, breaking down the primal cuts into pieces ready for cooking.

After your class, enjoy the fruits of your labour in a three-course “Butcher’s Menu” dinner, with a focus on the meat worked on during the masterclass. As a TRULY guest, you will also take home the cuts of meat you prepared.
