“A first-hand look at the makings of artisanal chocolate” Saveur

Why we love it

Well-known for its abstract ornamental paper, signature chocolate bars and emphasis on clarity of flavour, MAST Brothers, founded in Brooklyn by pioneering brothers Rick and Michael Mast in 2007, is London's first in-house, bean-to-bar chocolate maker. From bean to bar, take part in a full day of chocolate making at MAST’s factory in Shoreditch. Over five fun, educational hours, the highly-trained staff at MAST share their passion and know-how, helping guests transform raw cacao beans into chocolate themselves, with a break for lunch at local British café Albion.

What's Included?

  • Access for one guest to a full-day bean-to-bar chocolate education workshop at MAST Brothers London
  • Indulge in chocolate beverages and cookies on arrival
  • Taste unlimited chocolate samples to learn how to taste chocolate like a professional

Description

Founded by Rick and Michael Mast in 2007 from their apartment in Brooklyn, MAST Brothers is introducing chocolate to the world with an obsessive attention to detail, meticulous craftsmanship, ground-breaking innovation, and inspirational simplicity. MAST Brothers is a ‘bean-to-bar’ chocolate maker - meaning it sources the finest single-estate cocoa beans directly from a handful of carefully selected farmers or cooperatives around the world, from Belize to Papua New Guinea and Madagascar to Tanzania.

In 2011, Michael Mast sailed a 70ft schooner from Cape Cod to the Dominican Republic to collect 20 tons of beans - when he docked back in Brooklyn it was the first time a sailing ship had unloaded commercial cargo in New York for nearly a century.

The beans are sorted by hand and roasted in-house at their three flagship stores on either side of the Atlantic (Brooklyn, Los Angeles, and London), and their decadent chocolate bars are all beautifully hand-wrapped in-house in thick, patterned Japanese paper designed in-house. Popular MAST Brothers flavours range from the conventional, like almond, to the more exotic, such as goats milk.

From bean to bar, take part in an afternoon of chocolate making at MAST Brothers’ sleek workshop on Shoreditch’s boutique-clad Redchurch Street, including a light lunch at nearby contemporary British café, Albion. Over the course of five fun and educational hours, the highly-trained staff at MAST Brothers will share their passion, know-how and the story behind the MAST Brothers chocolate making process.

In a live, hands-on demonstration, guests will be given raw beans to process and transform into hand-made, hand-wrapped chocolate bars - all according to the bean-to-bar philosophy – and will learn how to adapt the MAST Brothers’ methods to make chocolate at home using basic kitchen equipment.

Guests will be introduced to professional chocolate tasting techniques by tasting dozens of unlimited (yes, unlimited!) chocolate throughout the afternoon, sampling MAST Brothers’ permanent range, limited edition ranges, unreleased and developmental flavours, ganache truffles, chocolate cookies, and chocolate drinks. Chocolate heaven!
