Creator-in-chief at Darbaar restaurant, Chef Abdul Yaseen, has been at the forefront of re-defining Modern Indian dining on these shores for well over a decade. Classically trained with the world-famous Oberoi hotel group in his native India, the chef moved from the palatial epicentre in Jaipur as a member of the founding team at The Cinnamon Club – Vivek Singh’s lauded restaurant in an old Westminister Library. Darbaar is Chef Yaseen’s first solo project, with all of the flavour-intense dishes and refined technique expected of one of Britain’s greatest Indian chefs.

Literally translated as ‘Royal Courtyard’, Darbaar pays homage to the regal excesses of India’s past. Crafted by the award-winning team at Nanu Design, the dining room features a playful juxtaposition between the Nordic sparseness of the rosewood tables and the slim leather chairs, against the opulent drapes and glitzy chandeliers. This space, however, simply provides the platform from which Chef Yaseen’s innovative cuisine can be best enjoyed. A 20-foot counter bordering the dining room and open kitchen is the eye catching focal point of the restaurant. From here, diners are able to see the chefs in action; whether it be toasting cloud-like naan breads from the 400˚C oven or reducing sauces to the perfect consistency, there is no doubt that the restaurant was designed to showcase the enormous showpiece kitchen.

With three consecutive titles in Square Meal’s Canapé cup and the award for Britain’s Barbecue champion there are few chefs able to combine the refined elegance and rustic cooking styles you will learn at Darbaar. Your experience begins with an exploration of the restaurant’s philosophy and how spice can be subtly balanced to enhanced great produce, rather than over power.

Following this, your party will learn to make Darbaar’s signature sharing dishes during a hands-on masterclass with the kitchen team. Be the focus of the chefs’ attention, with the restaurant shut to the public for the duration of your session. You and your guests will learn three or more signature dishes, such as ‘Kasturi butter chicken’ and ‘Kadhai-spiced paneer’.

The Darbaar ethos is all about generosity and indulgence, so the perfect way to follow a hard shift in the kitchen is with their eight-dish seasonal banquet menu in the private dining room. Dishes such as ‘Kerala spiced shrimp’ and ‘Cardamom shrikhand’ are great reminders of what you have learnt during your time in the kitchen; providing a whistle-stop tour of India’s finest royal dishes. In true sub-continental style, the meal at Darbaar ends with Naan Khatai – India’s answer to shortbread – and a Royal Indian spiced chai tea.
