Enrol in a one day cooking class at the Tan Rosie Caribbean Cookery School and master the art of Caribbean cuisine with delectable dishes from Jamaica, St. Lucia and Barbados. Mother and daughter team, Lee Sylvester and Monica Cudjoe opened the cooking school in 2018 after 10 years of making pestos and spices mixes for Tan Rosie Foods. Lee has had a lifelong love affair with the food of her mother’s native Grenada and the islands surrounding it. Together they began turning this love into a business. Their aim is to help people learn the history and uses of the spices that Caribbean food is so well known for. The classes showcase food from all over the Caribbean islands, so guests get a better understanding of the region’s cuisine.
The name ‘Tan’ is an affectionate name for ‘Aunt’ in the Caribbean – Aunty, Tanty, Tan! ‘Rosie’ is Monica’s grandmother who inspired her to cook and fondly known as ‘Tan Rosie’ throughout the family and beyond. Monica is a seasoned cook with a strong Caribbean heritage. She started cooking from an early age in her home country of Carriacou. Since moving to England in the 1960’s she has always tried to mix Caribbean cooking with different cuisines.
Choose from an array of classes including Jamaican classics, Trinidad & Tobago Classics, Caribbean Masterclass, Caribbean Culinary Cruise, Roti & Tings, 3 Island Tour and Caribbean Feast. Meet fellow cooks and get into the mood with Caribbean canapés on arrival, before trying your hand at some of the best dishes that the Caribbean has to offer. You’ll be given tips along the way, including the best places to buy Caribbean ingredients and refreshments will be provided throughout to keep the creativity flowing. Savour finished dishes at the end and bring containers to take any leftovers home. Guests will receive recipe cards of each dish as well as a complimentary Tan Rosie rub.
