Aged 12, Salvatore Calabrese made his first ever drink: the Negroni. And now, four decades later, in Brown’s Hotel in Mayfair, he’s created six wonders: from the classic Martini Negroni to a Gran Torino made with Dewars whisky, blood orange liqueur and spicy ginger foam.

The list of cocktails at The Donovan Bar at Brown’s contains 16 originals divided into four sections: bright and refreshing High Exposure; dark and mellow Low Exposure; strong and bold High Contrast; and soft and delicate Low Contrast.

‘In my mind,’ Calabrese says, ‘a great drink is one that people will still be talking about in 100 years’ time,’ referring specifically to his Breakfast Martini, which was created after his wife served him a plate of marmalade on toast. The result: a drink that’s bittersweet, sharp and sticky using a blend of Bombay Sapphire, Cointreau, lemon juice and orange marmalade, with orange zest for added bite.

One of the bar’s favourites is the Salvatore Martini, named after the man himself – the exact blend that awarded him the name ‘The Maestro.’ This will be your first taste of his creations, followed by another signature cocktail and accompanied by a choice of bar snacks such as rock oysters, bacon crackers and crispy squid.
