Nobu was originally opened in New York by chef Nobuyuki Matsuhisa in 1994. Since then it has become a global institution with foodies the around the world with locations across five continents.
Nobu trained as a sushi chef in his native Japan before opening his own sushi bar in Peru. Whilst in Peru he was introduced to a host of new ingredients and pioneered an innovative style combining the flavours of Japan with those of South America. This influence can be seen with dishes such as yellowtail sashimi served with jalapeño and coriander.

It was Robert De Niro and Meir Teper who encouraged Nobu to open his first New York restaurant. De Niro co-founded this first New York venture and the partnership has has endured with De Niro co-founding a number of other Nobu restaurants.
