Description

Both the atmosphere and cuisine at Colette celebrate French style. This French bistro is part of restauranteur Steven Salm’s Chase Hospitality Group which includes the highly popular venues The Chase and Kasa Moto.

Occupying the ground floor of the modern Thompson Hotel, the Côte D’Azur inspired space is elegant and chic. The Southern French style features pastel blues, yellows and chalky whites, giving the room a fresh and airy feel. Parisian influences come in the style of barrel-vaulted ceilings, marble clad surfaces and a picturesque sculptural pavilion offering al fresco dining and views that extend over Victoria Memorial Park.

Sommelier Jay Whiteley, from award-winning Hawksworth in Vancouver, presides over a distinctively French wine list that includes bottles from Burgundy and Champagne.

You’ll enjoy executive chef Michael Steh’s modern renditions of classic French favourites, showcased in this specially-created Indulgence Menu. The selected dishes ensure you taste the very best of Steh’s unfussy yet refined French cuisine.

Indulge in a Trio de Foie Gras, a delectable melee of Torchon with rhubarb compote, rich chicken liver parfait and a pan seared quail egg en croûte.

Similarly to Colette’s sister restaurants The Chase and The Chase Fish & Oyster, seafood takes centre stage. The Shellfish Mariniere’s hearty mussels and clams are presented invitingly with succulent crab claws and accompanied by daily baked, grilled sourdough to soak in the fragrant Dijon wine sauce.

To finish, the La Tour de Colette is a decadent feast of lobster, crab mussels and shrimp served alongside a punchy tarragon aioli and crunchy bread crisps.
