This Michelin star restaurant in Beverly Hills is inspired by the wonderful fresh produce and wines that come from the Sonoma valley. Maude provides guests quarterly seasonal menus which are based on the cuisines and wines of distinct wine-making regions from all around the world. The set-menu (with or with no wine-pairing) dinners comprise 10 courses and there are only 24 seats available, so you are well-advised to book well in advance.

In spite of being in a city with its fair share of high-end Japanese cuisine, there’s something clearly special taking place at Hayato. Nestled behind traditional noren which hang over the door, chef-owner Brandon Go makes a multicourse, traditional kaiseki dinner every single night of service. The space is comfortable, the ceramics are handmade and imported from Japan. Go’s precision and technique come through training under Michelin-starred Japanese chefs.

Artful minimalism is the name of Go’s kaiseki game with dishes such as steamed abalone with a generous liver sauce, an owan course of subtle crab meatball soup, and fresh fruit that is coated in a salted sake jelly. These fabulously artful kaiseki dinners usually fill up a month in advance so plan ahead.

Yasu – Master Chef Yasu – 1 Michelin Star

The first American branch of the acclaimed Yasu Toronto, this outpost is analogous to a jewel in the crown of area sushiyas. It’s a simple, wonderfully lit, and somewhat Zen den, with an L-shaped counter which seats some 10 lucky guests in addition to a few tables that line one side of the room. An intermingling of dark and light colours, together with a “metallic” backdrop, helps things along nicely.
This omakase opens with a procession of sashimi, such as cherry trout, sea bream and scallops. Each slice is carefully arranged on an ornate tray with just a touch of wasabi, ginger and soy. Nigiri follows next — think about snappy striped jack over faultlessly formed shari, golden eye snapper with yuzu kosho, and snow crab that is dipped in warm dashi. Tuna, which is served three ways, is a signature way to end the meal.

If you feel like sushi, a visit to the one-Michelin-starred Nozawa Bar really does need to be on your list. Every morning, executive chef Osamu Fujita visits the Los Angeles fish markets to select the freshest options for the day and sets out the menu accordingly.

Over 20 years after its first starred recognition by Michelin, Josiah Citrin’s Santa Monica fine dining stalwart is back up to two-star status after having been demoted in 2019 and experiencing a pre-pandemic pivot away from an ultra-formal white tablecloth experience.

Now seating just 14 diners at a time in a concealed alcove inside the more casual (but still upscale) Citrin, Mélisse still delivers one of the city’s top tasting menus, with well-appointed, detail-oriented dishes such as caviar in chawanmushi topped with imported Hokkaido uni together with a rich chestnut soup that is topped with truffle foam.
